Apple, Almond and Coconut Cookies

Being a complete pudding face I had to find something to satisfy my dessert belly, whilst in keeping with the basic primal rules.  I found a  recipe for ‘Caveman Cookies‘ that looked easy and tasty enough to give it a try.

The ingredients required were simple and consisted of: almonds, shredded coconut, an egg and a granny smith apple. They were straight forward to make and turned out quite well.

Based on the quantity of ingredients used in the recipe, it made 5 large cookies each containing approximately 280 calories.

However, when they were put to the taste test, I did find them a little dry and not quite sweet enough. I think next time I will try adding a little butter to the mix  to moisten them up, and some berries to add a little extra natural sweetness. I will keep you posted as to how the next batch turn out!

    I’d suggest some currants or, better still, mixed fruit for flavour (is this a US spell check? Get rid of it.), fewer calories and closer adoption of primal religion.
